A member of the same plant family as kale, spinach and beets, chard is a nutrition-packed green leafy vegetable that can easily be termed one of nature's superfoods.
Commonly referred to as Swiss chard (even though it doesn't come from Switzerland!) and rainbow chard because of its vibrant green, yellow or pink stalks.
Chard has some wonderful health benefits. To name a few, it's:
An outstanding source of vitamin K, essential for proper blood clotting and strong bones.
A good source of magnesium—for muscle relaxation and healthy blood pressure
A good source of vitamin C—to support body collagen and immune function
High in antioxidants—like beta carotene, lutein, and zeaxanthin
Boiled or sautéed, Chard's subtly sweet flavor makes it a delightful addition to any dish. Keep in mind though that the stalks may take a little bit more time to cook since they are much thicker than their leaves!
